The yuca is a lot easier to handl...Very innovative! The yuca is a lot easier to handle if you peel and grate it BEFORE cooking. It cooks even faster then, too. As for the toppings, I'm visualizing those 'balls' made with the traditional yuca accompaniment: a mojito made from sour orange/garlic/olive oil/seasonings.
