Cobaya Gets Cruxed


At some point fairly late Monday evening, after the last course had been served, somebody asked me how this all came about. I looked at the chef. He looked at me. I shrugged. The truth is, we no longer had any clear recollection how, exactly, we'd gotten to this point.

The chef was Brandon Baltzley, former sludge metal drummer and Chicago cooking wunderkind, mastermind of the Crux itinerant pop-up restaurant / culinary collective, author, and soon-to-be chef and farmer at TMIP, somewhere in the country an hour or so out of Chicago. We were decompressing in the Broken Shaker bar in the Freehand Miami (f/k/a the Indian Creek Hotel), which had just played gracious host to Brandon's nine-plus course dinner for forty Cobaya guinea pigs. It was a dinner that he'd really only started prepping some time around midnight the night before. The fact that it came together at all was still something of a surprise to me. The fact that it turned out so well was nothing short of remarkable.

It was always going to be a bit tricky. Brandon was planning to come in to Miami early Sunday morning, have a sous chef from Chicago join him down here, and shop and prep all day Sunday and Monday with help from Chef Jeremiah Bullfrog at the Freehand. Then the sous chef went AWOL and Brandon missed his flight (TSA taking particular interest in a duffel bag full of vacuum-sealed offal and little baggies of white powders - "They're just hydrocolloids!"), and as of mid-day Sunday it looked like there wasn't going to be any dinner at all.

But we would not be so easily sidetracked. After some quick reshuffling, Brandon was on another (non-direct) flight from Pittsburgh (his temporary home base), his mom was on a Greyhound bus down from Jacksonville to come help, Jeremiah had a trip to the seafood market to make, and I had a grocery list to feed a crowd of forty so there would be something to cook when Brandon finally arrived. Jeremiah and Steve Santana busted ass the next day to help with the prep, and Brandon's backup kitchen reinforcements arrived Monday afternoon.

Some people thrive on chaos and stress. And by Monday morning, Brandon had gone from thinking we needed to reschedule, then thinking he wouldn't be able to execute the menu he'd planned, to actually adding on a couple extra snacks on top of it (and supplementing my grocery shopping duties as a result). Somehow, it all happened.[1]


With the benefit of hindsight and sobriety, I now have a better idea of how this thing came about. I'd actually been following Baltzley for some time: his most recent project, Crux, a sort of itinerant restaurant pop-up / co-op, seemed very much in the same spirit of what we're trying to do with Cobaya. Plus, he's got a pretty intriguing backstory, interesting enough to have scored himself a book deal (which clearly gets bonus points for having a blurb that manages to mention Paula Deen and Grant Achatz in the same sentence).

So I sent him a message: "You want to come down to Miami in December and do a dinner?" The response came quickly: "I am definitely game." I reached out to Chef Jeremiah, now the in-house chef at the Freehand, and a long-time Cobaya facilitator, and we were able to line up a kitchen and a dining space at the Broken Shaker, with the Bar Lab boys Elad Zvi and Gabe Orta contributing some cocktail pairings to go along with the dinner.


After 36 frantic hours, here was the end result.

Hurricane Sandy Relief Dinner at The Dutch


"Superstorm Sandy" hit the eastern seaboard exactly three weeks ago on October 29, leaving a trail of damage that will have lasting aftereffects. Lower Manhattan went dark for days; some New York and New Jersey communities like Rockaway, Red Hook, Staten Island and Long Beach Island have been devastated by flooding, fires and ongoing power outages.

The restaurant community, with its thin margins, perishable inventory and dependence on customer foot traffic, is among the most sensitive to disasters like this. And at the same time, it is also one of the most apt to respond and assist: almost immediately after the storm cleared and the damage was assessed, chefs and restaurant owners were looking for ways they could help others.

One of the first to jump on the task was Andrew Carmellini: two days after Sandy, before the power was even restored, The Dutch in New York was serving up free soup and salad for anyone in the neighborhood. And together with fellow New York chefs Marco Canora, George Mendes and Seamus Mullen, he quickly put together "NYC Food Flood" to provide direct aid to those impacted by the storm.

When I heard Carmellini had a stash of truffles for a planned "Trufflepalooza" dinner that had to be cancelled, I suggested he send them down to Miami so we could do a fundraiser down here. The truffles found another home, but the idea stuck. Chef Carmellini suggested lining up some local chefs to team up for a charity dinner, and the outpouring of support was overwhelming. In only a couple days, Michelle Bernstein (Michy's), Richard Gras and Antonio Bachour (J&G Grill), Aaron Brooks (Edge Steak), Brad Kilgore (Exit 1), Jeremiah Bullfrog (gastroPod), and Bar Lab had all agreed to participate. Andrew Zimmern sent his AZ Canteen truck down for the event. Many others - Michael's Genuine, The Bazaar, Bourbon Steak, neMesis Urban Bistro, Wolfe's Wine Shoppe, South Beach Wine & Food Festival, Miami Wine and Food Festival, and more - contributed items for a silent auction.

And when we called for our Cobaya "guinea pigs" to come out and support the event, we received an equally enthusiastic response, filling more than 40 of the available spots for the dinner. South Floridians can surely empathize as New York recovers from the aftermath of a destructive hurricane, and I was gratified and moved by the generous support for the efforts of Chef Carmellini and so many others. Thank you for being "Cobayas for a Cause".

So, sure, it's all for a good cause; but what about the food?

Estiatorio Milos - Miami Beach

I started this blog with the purpose of sharing great dining experiences in the Miami area, but I'll admit it: there are times that I'd like to keep some things to myself. There's a certain pleasure in having secrets, particularly when they're small, intimate places that for an hour or two you can sort of claim as your own.[1]

Estiatorio Milos, the newish Greek restaurant from Costas Spiliadis on the SoFi[2] end of South Beach, is far from a small, intimate place. To the contrary, Milos (which has siblings in Athens, New York, Montreal, and Las Vegas) is built on a grand scale. It seats a couple hundred in a breezy wide-open space with billowing white curtains and natural blond wood all around. The back of the dining room has an extravagant display of fish and seafood, flown in overnight from the Mediterranean and packed on ice. They're so impeccably fresh that even right next to the display, the only fish you smell are the ones cooking nearby in the open kitchen, on massive open grills with grates that can be wheeled up or down to control their proximity to the heat.

The menu at Milos is minimalist: basically, you can choose from among a few raw seafood items, several typical Greek meze, salads and vegetables. Then go pick your fish and decide if you want it grilled or perhaps baked in a salt crust. There are lamb chops and a few steaks for the landlubbers. And that's it.

But the menu also has prices to match the grandiosity of the venue: The "Milos Special" appetizer, a tower of fried zucchini and eggplant with cubes of kefalograviera cheese and tzatziki, is around $30;[3] four little slices of avgotaraho (cured mullet roe) on crostini ran me $32; those fish you see have price tags in the $40's and $50's per pound. These tariffs quickly add up to make Milos one of the most expensive dining propositions in town.

Whether it's worth it depends a lot on how passionate you are about über-fresh seafood: yes, it's very pricey, but the red mullet (barbouni, for the Greek) we had one visit was so fresh it seemed still ready to jump back into the water.[4] An item rarely seen around these parts, this is one fish they elect to delicately fry instead of grill, and it was fantastic: plump, firm flesh with an almost crustacean sweetness. And there really is something inspirational about that display case: my 12-year old daughter has seen me pick apart plenty of whole fish, but was never inclined to do so on her own until she saw those mullets.

Curiously, Milos is both one of the most expensive restaurants in town and one of the most affordable depending on how you do it: while the regular menu is borderline prohibitive, they also offer a much more wallet-friendly three-course lunch special (recently increased from $20.12 to $24.07), and a $49 four-course dinner special from 5:00-7:00 pm (and all day on Sunday).[5]

But I'm not really here to tell you about the regular restaurant.

The Bazaar - South Beach


If it wasn't the most eagerly anticipated restaurant opening in Miami, The Bazaar was certainly the most long-awaited. Speculation that Chef José Andrés might be opening a Bazaar in Miami started all the way back in early 2009, shortly after the original Bazaar Los Angeles opened, when the SLS hotel chain started work on the Ritz Plaza hotel on South Beach.[1] The patter continued in 2010. And then we waited. And waited. And waited, as is the customary Miami style.

Finally last month, Bazaar South Beach opened. It was worth the wait.[2]

I've not been to The Bazaar in L.A., but I've been to several other of Chef Andrés' establishments - Washington DC's Jaleo several times, minibar back in 2008, the now-closed Café Atlantico, plus more recent visits to é and China Poblano in Las Vegas. (For more background on Chef Andrés, read my post on é.) The Bazaar borrows bits and pieces from each of them. There are traditional Spanish tapas, many of which are mainstays on the Jaleo menu. There are more contemporary dishes, often derived from items that started as part of the minibar and é multi-course extravaganzas. And there's even a section of the menu described as "Miami Meets the World," an unusual conglomeration of Singapore street foods, ceviches and "nigiri," and several more items with Latin American flavors, similar to the Asian / Mexican mash-up he does at China Poblano.[3] It is a sprawling, ambitious menu - perhaps even more so than the original Bazaar in L.A.

The venue itself is not quite as grand as I might have anticipated, though it's growing on me. The Ritz Plaza is one of Miami Beach's old Art Deco hotels, built in 1939, and like many of the Art Deco properties, it doesn't really have a separate space set aside for a restaurant. What this means is that as soon as you pass through the hotel doors, you've stumbled into the "Rojo" room, the first of two dining rooms of The Bazaar, with the hotel's check-in desk off to the other side of the entrance.

Done up in traditionally Spanish red and black colors but with a contemporary feel, this is the more casual of the dining rooms. Two- and four-tops line the near wall, while larger tables, some bar-height, occupy the middle of the room, flanked on the far wall by a bar and open kitchen.[4] A taxidermied bull's head wearing a lucha libre mask, by artist Mikel Urmeneta,[5] looks out from one wall, while above the bar is a mural by local artist Claudio Picasso that hearkens back to the hotel's original Art Deco style.


On the other side of the bar and kitchen is the "Blanca" dining room, simultaneously a little more posh and a little more cozy. Much of the seating is on well-cushioned sofas; knick-knacks and antique photos adorn ledges on the walls; a massive shell-encrusted chandelier hangs from the ceiling. It looks like it could be your abuela's living room, if your abuela hired Phillippe Starck as a decorator.[6]


A good way to start a meal is with a LN2 frozen caipirinha, a fun bit of tableside cryotechnics by which the traditional Brazilian concoction of cachaca, lime and sugar is mixed with super-cold liquid nitrogen in a dramatic billow of steam to a perfect slushy consistency.


At $5 each, it's also the "Joe's Fried Chicken"[7] of the Bazaar menu, even if the portion size has been tapered back a bit since my first round.


You could alternatively start with "The Ultimate Gin & Tonic," which at $18 is no bargain at all, but is still a very fine drink. Spaniards are obsessed with the "gintonic," and this version plays up that obsession by reintroducing the botanicals typically used in the spirit: Fever Tree tonic, juniper berries, fresh herbs and flowers, and lime mingle in the glass along with your choice of gins.[8]

This will also give you some extra time to peruse the menu, which you're going to need. With over sixty items - even more if you count the selections of Spanish hams and cheeses - it's a fairly daunting prospect, even for an avid menu decoder like myself.[9] Almost exclusively tapas-style small plates, the choices divide into two main themes - "Miami Meets the World" and "Spain Yesterday and Today" - which each get further broken down into several subdivisions. The "Miami" section includes a "Singapore Connection," "Yogurts and Cones," "New Generation Nigiri and Ceviche," "Seafood," "Fruits and Vegetables," "Meats," and "Some Little Sandwiches." "Spain" includes "Latas y Conservas," "Jamones y Embutidos," "Quesos," "Verduras Tradicional," "Pescado y Marisco," and "Carnes."

State of the Union (of Miami Dining)

I'd been a bit despondent of late over the closing of a couple of my more favorite Miami restaurants. It is, of course, a known fact that the restaurant business is a brutally difficult one. Restaurants - even successful ones - don't live forever, and relatively few have the staying power to last more than a few years.[1] But that still doesn't keep me from becoming attached, especially to places that do things right.


Sustain, in Midtown Miami, was one of those places for me. It wasn't the best restaurant in Miami; it wasn't even the best of the farm-to-table, sustainable-sourcing themed restaurants in Miami (Michael's Genuine remains the category-killer of that genre).[2] But it was a good restaurant. The menu balanced the accessible (fried chicken, burger, pizza, all done quite well) with the exotic (roasted marrow bones with pineapple jam, turnip "carpaccio"). The execution was solid and improved with just about every visit. The staff was friendly and knowledgeable, the cocktails were outstanding, the wine list assembled by Daniel Toral offered some of the best sub-$50 selections in town, the music was great. The Sunday brunch they rolled out shortly before closing was becoming a regular ritual for us. It was the kind of place I could go to the bar and grab a snack, or bring a group of family and friends, and everyone would leave happy. And yet Sustain was - well, unsustainable.[3]


Michelle Bernstein's Sra. Martinez in the Design District was another place that kind of broke my heart a little when I heard it was closing. We were at Sra. Martinez the night after it opened in December 2008 for Mrs. F's birthday, and we were there again the night before it closed earlier this month. Both were outstanding meals, and we had many more in between. There is a long list of dishes from Sra. M that I will pine for if they don't resurface somewhere else: the crispy artichokes with lemon aioli, the eggplant drizzled with honey, the duck and foie gras butifarra sausage with gigante beans, the marrow bones with eel and apples, the egg yolk "carpaccio." But Chef Bernstein has always understood the magpie-like nature of the Miami dining market, the constant attraction to the latest shiny object, and I don't see the Sra. M closing - after a 3 1/2 year run - as a failure so much as a step towards yet another reinvention. Still, I will miss it.

Since I started writing this blog 3 1/2 years ago, I've been feeling increasingly positive about Miami's dining "scene." Though still prone to either chasing the latest trend (food trucks, Momofukian Asian mash-ups) or sticking with the tried and true (steakhouse, generic Italian), the restaurant population these days overall is much more diverse, much more open to creativity, than when I started keeping track.[4] Yet I was still led to wonder: were these closures just the usual market forces at work, or the sign of something bigger? So my co-conspirators in the Cobaya underground dining group, Chowfather, Steve BM, and I gassed up the Cobaya Bus and took it out for a spin to assess the state of Miami dining.[5]

Animal Pizzeria

Not long after Chef Michael Schwartz opened up Harry's Pizzeria, he started putting the space to use for more than just baking pies. In a twist on the "pop-up" genre that is the restaurant industry's latest trend, Schwartz has brought in chefs from around the country to cook for an evening in his little pizza parlor. In November 2011 Harry's held its first pop-up dinner with Gabrielle Hamilton of New York's Prune. Since then, Harry's has played host to a distinguished list of visiting talent: Jonathan Waxman, Marc Vetri, Jonathon Sawyer, and Kevin Sbraga. Last night, it was chefs Vinny Dotolo and Jon Shook, of Los Angeles' Animal and Son of a Gun, who took over the restaurant for the night.

Some folks may know Shook and Dotolo from their successful L.A. restaurants. Some may remember back to their short-lived stint on the Food Network with "Two Dudes Catering." Though I didn't know it at the time, I've actually been eating their food since even before then - they both cut their teeth at the Strand here in Miami Beach (now long gone) more than a decade ago, back when a young Michelle Bernstein was the chef and I was taking Mrs. F there for date nights.

Though Dotolo and Shook had not crossed paths with Michael Schwartz back in the day, they'd become acquainted more recently on the charity circuit, and - lucky for us here in Miami - came back home to put together a dinner at Harry's.

Some passed appetizers started things off, including these kumamoto oysters. A cucumber and serrano chile gelee provided a great balance of cool and heat to set off the briny pop of the oysters. Crostini topped with sautéed porcini mushrooms and a rich truffle fondue offered a more earthy starting point for the meal.

Though I enjoy it, often fish crudo seems like a "throwaway" of a dish - fish, oil, salt, citrus, done. Too easy. So this was actually a pleasant surprise: mild, faintly sweet slices of triggerfish swam in a colatura vinaigrette with that unique umami zap fish sauce provides of intense flavor without heaviness. Fresh basil and mint, chopped peanuts, and crispy fried shallots pulled things further in a Thai direction, with a little something different in each bite.[1] I might have worried that the fermented fish funk of the colatura would be a bad pairing with the fresh raw fish, but I loved the combination.

Cobaya Carmellini (a/k/a Cobaya Goes Dutch)

We've actually been in talks for this Cobaya dinner since last October, before Chef Andrew Carmellini opened his Miami outpost of The Dutch. Of course, Carmellini has had some other stuff on his plate - opening the Miami restaurant, running Locanda Verde and The Dutch in New York, publishing a new cookbook, "American Flavor," to name a few. But the stars finally aligned last week, when Carmellini and his Miami crew, including Chef de Cuisine Conor Hanlon and Pastry Chef Joshua Gripper, put together a fantastic-looking menu for thirty guinea pigs.

I say fantastic "looking" because, sadly, I had to miss this one due to work-related travel. But I did stop by before the dinner and Chef Carmellini was gracious enough to give me a tour of the kitchen to see what was in progress. The theme carrying through several of these dishes was "The Whole Damn Thing!" - turbot cooked whole (innards and all, if he stuck with the plan as of around 4pm the afternoon of the dinner), with a sauce made from the bones; a fifty pound pig from Hialeah, prepared about a half-dozen ways. And though I didn't get to taste any of it, I got a good look at what I missed out on from the folks who were there.

It's the first Cobaya dinner I've missed, and it sure looks like a great one. It's also my first time trying to recap a meal I didn't eat.

BGR The Burger Joint - Coral Gables

Some people ask me why there aren't more negative reviews here at Food For Thought. Or, to put it another way, they give me grief because I like most of the places I write about. I think most of my commentary is balanced: I'm not a cheerleader, and even most positive write-ups will offer some criticism too. But it's true that I don't often outright pan restaurants here, even though those kind of rants can be the most fun to write (and read).

Why is that? There are a few reasons. First, I see it as my primary mission to help people find good things to eat. The easiest way to do that is to write about good restaurants. Yes, I could also write about bad restaurants and warn people away from them, but that kind of process of elimination seems rather inefficient.

Equally, if not more important: I like to eat good things. I really hate having a lousy meal. And as a rather dedicated eater, one of the things I've learned to do pretty well is to figure out how to avoid them. Here, there definitely is a process of elimination at work. If I look at a menu online, I can pretty quickly tell if there's nothing that's going to interest me (for instance, yet another generic Italian menu or another uninspired steakhouse will not be a draw). Another tell: if a restaurant just opened their first location and are already trying to market franchise opportunities on their website, that's a good sign that they're more about business than food.

So I've gotten pretty good at "advance scouting," and while some restaurants may not live up to expectations, I'm generally pretty successful at avoiding outright bad meals (unless, as inevitably happens sometimes, I don't get to choose the place).

And finally, I am not a professional critic. Nobody's paying me to do this. I won't typically write up a restaurant unless I've visited multiple times, and if I've had a bad experience, there's usually not much reason for me to go back and repeat it.

All of which is a very long preface for this: I did not like "BGR The Burger Joint."

Shake Shack - South Beach

I'm clearly quite late to the Shake Shack party. Indeed, the hubbub started, well, hubbubbing more than half a year ago with the announcement that New York restaurateur extraordinaire Danny Meyer would be opening his first branch outside of NYC on Lincoln Road in South Beach. "It's the best!" "New Yorkers wait in line an hour for their burgers and shakes!" "It'll make you poop rainbows!" The official opening date was yesterday, June 22,[*] and already no less than 17 citizens of Yelpistan have checked in, plus more in Chowsylvania. Why on earth haven't I been there yet?

OK, OK. One ShackBurger, some Cheese Fries, and a "Shark Attack" Concrete, please.


Fortunately, when I got there around 7pm the line was only - well, one person deep. Like I said, everyone's already been there. But the tables all around were mostly full, and there was a steady flow of customers. I got my order after about 10 minutes, which I spent watching 15 or so people mill busily about the open kitchen.


All of Shake Shack's burgers are made with hormone- and antibiotic-free Angus beef. I'd be curious to know whether the Miami branch is getting its beef from NY butcher legend Pat LaFrieda like the NY ones do; doubt it. The "ShackBurger" ($4.75 for a single) features a modestly sized 4-oz. patty topped with American cheese, lettuce, tomato and "ShackSauce." If you don't opt for the "ShackBurger," the burger will come entirely unadorned, or with your choice of lettuce, tomato, pickle or onion. For better or worse, there will be no "Stairway to Heaven" burgers topped with foie gras and truffles or "Rock Lobster" burgers with lobster, watercress and tarragon remoulade here.

How was it? After all the hype, frankly, it would have been a disappointment if this burger didn't do a triple axel with a back flip to arrive on my plate, while simultaneously giving me a handjob under the table, and taste like I was eating the very flesh of Kamadhenu, the divine Hindu cow that can grant all wishes.

Zuma - Miami - First Look

The idea of a contemporary, upscale Japanese restaurant is not exactly a revolutionary one. Indeed, it's something Nobu Matsuhisa has been doing successfully for more than two decades, with many having followed in his wake. And yet Zuma, the newly opened restaurant featuring "contemporary Japanese cuisine" in the Epic Hotel, still feels like something of a breath of fresh air. If there are other restaurants like it, there are certainly none in downtown Miami. They officially opened last week and we paid our first visit Saturday evening.

Zuma comes to Miami by way of London, after having opened other satellite offices in Hong Kong, Istanbul and Dubai. The original outpost in London has earned a goodly amount of praise, including an appearance (at #66) in San Pellegrino's annual "World's Best Restaurants" list. It styles itself as a "sophisticated twist on the traditional Japanese izakaya." An izakaya is, traditionally, a drinking establishment comparable to the British pub which also serves food, typically in small portions often referred to as "Japanese tapas." Here, izakaya describes the menu much more accurately than it does the venue, which, unlike the typically humble Japanese drinking den, is lofty and ambitious.

Miami's Zuma, located in the lobby floor of the Epic, is a cavernous space done up in a modern style in many shades of beige. The room is open two, even three stories up in places, with square panels suspended from the ceiling to break up the expanse, and floor-to-ceiling windows that look out onto the Miami River. There's a sizable bar lounge area in front, behind which are tables (mostly rounds, and well-spaced) as well as a robata station and then a sushi bar. It's a visually interesting space even if it does still retain a touch of "hotel restaurant" feel to it.

The menu features selections of sashimi, nigiri and maki, a variety of small plates, as well as several more substantial main-course-sized items. Food comes either from the sushi bar, the robata grill, or the kitchen, and dishes are brought out to the table continuously over the course of the meal, rather than as appetizer and then entrée. If Sugarcane Raw Bar Grill had not opened several months earlier, or if Zuma had not already adopted this format at its other restaurants, surely someone would be accusing one of copying from the other. Instead, we can attribute it to a case of parallel independent development.


Our table's order covered items from each of the different kitchen stations. We started with their house-made tofu ($8), served with traditional D.I.Y. condiments - wasabi, ginger, green onions, toasted sesame seeds, as well as a savory barley miso (apologies, incidentally for the lousy iPhone pics). If you think you don't like tofu, this version may well change your mind. It has all the luxurious, creamy richness of a good burrata, yet remains light and clean-tasting. The barley miso was delicious, though it may have been too powerful a companion for the tofu. If this was not quite as good as the house-made tofu I had at Aburiya Raku in Las Vegas, it was certainly close.

Cobaya Experiment #6 - CobayaSteak at Bourbon Steak

Over the past few years, Miami has been the site of much culinary colonization. Several chefs with national reputations have set up outposts here; and as often as not, those outposts take the form of a steakhouse. Michael Mina's Bourbon Steak, Alfred Portale's Gotham Steak, Laurent Tourondel's BLT Steak ... It's a formula designed to capitalize on the name while minimizing the execution risk as they put others in charge of carrying the brand's flag in the far-flung colonies: given the inherently limited nature of a steakhouse menu, diners will expect quality, but not necessarily the same creativity or flourishes by which these big-name chefs garnered their reputation in the first place.

That's not to sell the steakhouses short. I've had some great meals at these places, and they have the capacity to serve as a springboard for younger kitchen talent (witness the nomination of Chef Sam Gorenstein of BLT Steak as a semifinalist for a James Beard Rising Star award this year). But the self-limiting format only gives so much wiggle room for the local chefs to show that they can do something other than grill a steak and cook potatoes.

That's in part what Cobaya is for: to give chefs a chance to showcase, or experiment with, things they may not be able to do in their "native habitat." When we met with Bourbon Steak's chef Gabriel Fenton and general manager John Riccardo, we told them that this was a no-holds-barred opportunity to cook whatever they wanted to make, and if there wasn't a single piece of steak on the menu, that was perfectly fine. And Chef Fenton - who spent several years as executive sous chef at Michael Mina's flagship restaurant in San Francisco - put together a beautiful meal in which a cow made only the briefest cameo appearance. We hardly noticed its absence.

There Will Be Boulud

Rumors have swirled for some time, now it's official. Uber-chef Daniel Boulud will be expanding his restaurant empire to Miami.

Boulud, whose flagship Daniel picked up three Michelin stars in the 2010 edition, will be opening a DB Bistro Moderne in the JW Marriott Marquis supposedly due to open in mid-2010. Boulud already has a toehold in Florida with Café Boulud in the Brazilian Court Hotel in Palm Beach. The DB destined for Miami is being described as a "sister restaurant" to the New York version and presumably will have a similar contemporary bistro format.

Good timing for the formal announcement: Boulud is the honoree at a tribute dinner during South Beach Wine & Food Festival Saturday night.

Hakkasan Dim Sum Brunch - Miami Beach


I have written earlier about the Miami Beach branch of Hakkasan, a spinoff of the London original which we visited several years ago. I noted then that it was a "serious bummer" that the lunchtime dim sum menu available in London was not being offered here in Miami. Happily, that oversight has now been remedied, and the dim sum menu is now available Saturdays and Sundays. I tried it this weekend with my usual dim sum companions, Frod Jr. and Little Miss F.

The Miami dim sum menu is, perhaps unsurprisingly, more abbreviated than the one you will find in London. While the London menu offers nearly 40 different smaller items, exclusive of roasted meats, soups, vegetables, noodle and rice dishes and more entrée-style dishes, the Miami menu offers only about half that many - more of a "best hits" compilation, with a few twists here and there.


These turnip cakes were possibly the best I've ever had - wonderfully crispy on the outside, creamy and tender inside, and generously studded throughout with sweetly spiced lap cheong (Chinese sausage). Frod Jr. had a "why didn't you tell me these were so good?" moment when he tried them (he had previously scorned them, believing they were tofu).


Shrimp har gow are a dim sum mainstay and often a good barometer of the quality of a restaurant. These were fresh and tasty, though I found the wrapper to be a little more elastic and firm than some of the best examples that I've sampled.

Shiu mai, typically filled with minced pork, sometimes mixed with shrimp, are another dim sum staple. Here, Hakkasan mixes things up a bit, substituting minced fish for the traditional filler, and topping them with a slice of lap cheong. These were a surprising disappointment - they tasted fishy, and putting the slices of sausage on top meant that they never really incorporated their way into the flavors of the dumpling at all.

You had to move pretty fast at our table to grab one of these "grilled Shanghai dumplings" (more often known as "potstickers"). We tried these from the dinner menu on an earlier visit and I thought then they were a great bargain (relatively speaking) at $8 for 6 pieces. The pricing of $6 for 3 pieces on the dim sum menu was less appealing (more on prices generally later).

What's in a Name?

For several months now, Miami has played host to the ongoing brouhaha between Michael Chow, founder of the Mr. Chow restaurants (including a new one in South Beach), and Philippe Chow (supposedly a/k/a Chak Yam Chau), who started the Philippe restaurants (including a new one in South Beach), which Mr. Chow #1 says are improperly trying to capitalize on his good name. (Though after this review, perhaps they both should change their names). The lawsuit has been quite entertaining, including allegations that Mr. Chow #2 was a mere "chopping assistant" in a Mr. Chow restaurant before going out on his own, and that Mr. Chow #1 invented such dishes as chicken satay with secret sauce (look out, next he will be claiming to have invented the question mark).

Is it possible there's another naming kerfuffle on the horizon for Miami?  Recently opening up in Coconut Grove is "The Ivy at the Grove" (in the former Christabelle's Quarter space). There is a long-standing London restaurant called The Ivy which has been around in some form since 1917, though perhaps more famous these days for who eats there than what they eat. It would be natural to think they're affiliated (indeed, New Times initially reported that the local Ivy was a branch of the London restaurant before being corrected) - but they're not. Indeed, buried within The Ivy at the Grove's website is a quiet disclaimer, given with typical British reserve: "Please note that we are not affiliated with the Ivy in London nor the Ivy in Los Angeles" (though they are affiliated with the Raffles private club in Chelsea). About a month ago, Eater Miami did a bit more investigation (a couple phone calls!) and not only avoided the error New Times initially made, but found even more mystery.

Wow - in one story, two trends I wish would die a quick death: unaffiliated knock-offs of restaurants that were mediocre to start, and the restaurant/lounge "concept."

Lüke - New Orleans

Even a successful restaurant has certain inherent limitations on its profitability. You can only squeeze so many butts into so many seats. You can only increase your prices by so much before you wander beyond whatever particular niche of the dining market you've captured. So for many - particularly in this era of celebrity chefdom - at some point there comes the urge to grow, which means adding additional venues.

There are at least a couple different approaches to such growth. Some restaurants take what I call the "clone and colonize" approach, bringing the same package to different regional or even international markets. Nobu has restaurants in nearly twenty different cities in a dozen different countries. Joel Robuchon (after basically retiring from cooking) has restaurants in Paris, London, Monaco, Hong Kong, Macao, Tokyo, New York and Las Vegas. A plethora of chefs have set up satellite offices in Vegas, and over the past couple years the influx of "invasive exotic species" has made its way to Miami as well. Even Thomas Keller has gone bi-coastal with Per Se in New York, plus Bouchons in Las Vegas and now Beverly Hills.

Other chefs stay closer to home, creating fiefdoms in their native territory. In Seattle, Tom Douglas has opened several restaurants all within a few blocks of his original flagship, Dahlia Lounge. Here in Miami, restaurateur Myles Chefetz has done much the same thing on the "SoFi" (South of Fifth Street) end of South Beach with Prime 112, Nemo, Shoji Sushi, Big Pink, and the latest addition, Prime Italian. Jonathan Eismann is looking to do the same in the Design District, where he recently opened PizzaVolante a block away from his flagship Pacific Time and will soon be opening Q and Fin right down the street. (Of course some chefs follow both approaches: Mario Batali has his chubby fingers in nine New York restaurants, three in Las Vegas, and a few in L.A. too).

Unlike the "clone and colonize" approach, which simply seeks to duplicate the same experience in a different venue, the "fiefdom" approach requires that there be something to distinguish one restaurant from another to reach different segments of the same geographic market. The easiest thing to do, particularly if you started with a high-end restaurant, is to do a lower-end, more budget-friendly place (note that David Chang did this in reverse, starting with Momofuku Noodle Bar and later opening the higher-end Ko); but then what? If you want to build an empire, the next step is to diversify the range of cuisines you offer.

That's what John Besh has done in New Orleans. Chef Besh's reputation was made at his Restaurant August, which I'd loosely characterize as contemporary French in style with a strong influence from the Creole and Cajun cuisines and native ingredients of Louisiana. Riding the waves of acclaim for August (to say nothing of other favorable attention including a strong appearance in Top Chef Masters), Chef Besh now runs no fewer than a half-dozen restaurants in New Orleans. They range from the inevitable steakhouse, to an Italian restaurant, Domenica, to the one we visited, Lüke.

Lüke is a brasserie with a curious Franco-Germanic (Alsatian?) tilt to it. The menu, picking up on some of the trends-du-jour (not necessarily a pejorative, I happen to be very much in favor of some of these), features lots of charcuterie and many varieties of pig parts. It also has typical brasserie items like moules & frites, roast chicken, steak & frites, and croque monsieur (or madame). The Germanic/Alsatian tilt manifests in dishes such as flamenküche (a/k/a tarte flambée),choucroûte, and an entirely unexpected matzo ball soup (!)

It's a somewhat rustic looking place with a bit of a turn-of-the-century feel, featuring a long bar with carved wooden pillars, tiled floors, a pressed tin ceiling, and fans operated by a pulley-and-belt system supposedly invented in the 1880s. We showed up early for our reservation and so started our meal at the bar, where we sampled their custom-brewed pilsner and some items from the raw bar.

The local P&J oysters were impeccably fresh and expertly shucked, and the Louisana shrimp were likewise fresh, sweet and tender. I generally prefer a smaller, tighter oyster like a kumomoto to a big sloppy one, but these were a happy medium - plump, firm and loaded with salty liquor. I might have hoped for something more adventurous to go along with them than cocktail sauce and horseradish sauce, but all they really needed was a squeeze of lemon anyway. Both the oysters and the shrimp seemed like a remarkable bargain at $7 and $11 per half-dozen, respectively.

A List For the New Year

First, a resolution: next year, I will do my "year in review" list before the actual expiration of the year. And next, a confession: I am terrible at "best" lists. I can tell you the high and low points of fifty different restaurants or dishes, but if you ask me to pick a favorite I am usually flummoxed. It's not just food. Favorite movie, song, author? I struggle with the superlatives. In fact, I'm so bad at it that when asked the simple question of what was my favorite meal of the year, I gave two different answers! If you ask me again, I might give still a different answer, particularly if I were to think back on our dinner at Arzak at the beginning of the year, or include our meal last week at Stella in New Orleans.

So, in no particular order, here are eleven (because these go to 11) thoughts on food over the past year:

1. Best Defense Against Foreign Invasion: 2009 started as the year of the invasive exotic species in Miami. Scarpetta from Scott Conant (actually opened December 2008), Eos from Michael Psilakis, BLT Steak from Laurent Tourondel, Gotham Steak from Alfred Portale (also a late '08 opening), all from New York, Hakkasan from London's Alan Yau, Au Pied de Cochon and Caviar Kaspia from Paris, Area 31 from Boston's John Critchley, Red the Steakhouse from Cleveland, Apple from L.A.'s Bryan Ogden, Mr. Chow from London by way of New York, and his evil twin Philippe, and surely others I'm not recalling, all opened in the past year (and some have already closed). But at year's end, it seems to be clear that the best cooking talent in Miami is still local-grown. Michael Schwartz with Michael's Genuine Food & Drink, and Michelle Bernstein with Michy's and Sra. Martinez, are still king and queen of the city despite the influx of foreign invaders. Kris Wessel and Red Light have hit on the right price point and vibe for the "new economy." Jonathan Eismann found Pacific Time's groove again in the Design District, branched out with PizzaVolante, and in the coming year will be adding a barbecue restaurant "Q" and a fish place "Fin" to his repertoire. No doubt some of the foreign interlopers are putting out some good food - Bourbon Steak (opened late 2007), Scarpetta, Hakkasan and Area 31 in particular - but the best stuff is still local.



2. Best Gastronomic Wonderland: San Sebastian. From high-brow to low, old-school to new, there may be nothing else like it in the world. Everything you have read or heard is true. Blocks and blocks of tapas bars with lavish spreads laid out on the counters, each more appealing than the next. Possibly the highest concentration per square mile of Michelin stars in any particular geographic area. Cutting edge cuisine, but still inextricably linked to longstanding Basque cooking traditions. I want to go back to there. Now.



3. Best Dining Phenomenon: Cobaya. Forgive me for tooting my own horn here a bit. Starting last year a group of Chowhounds started getting together for some great dinner experiences. Several months ago a couple of us began kicking around the idea of putting together something like the "underground dinners" that have taken root in other cities. The idea, very simply, was to gather up a group of adventurous, uninhibited diners who were willing to serve as guinea pigs for talented, creative local chefs to provide off-the-menu (and, sometimes, out-of-the-restaurant) experiences. Our first event brought sixteen diners together with Chef Andrea Curto-Randazzo and her talented Sous Chef Kyle Foster for a great meal at Talula (one of my favorite meals of 2009!). For our second experiment with Chef Jeremiah Bullfrog in a penthouse apartment in Midtown, we had so much interest we added a second seating. A group of guinea pigs also came out to Harvey's By the Bay in the American Legion Post for a pig-fest with Chef Jeremiah that was in part a testing ground for his new gastroPOD mobile food project. Our most recent dinner with Chef Jonathan Eismann at his not-yet-opened restaurant Fin in the Design District sold out 34 seats in less than two hours. The Cobaya Group now has over 250 members, and one of the most gratifying experiences for me over the past year has been seeing that there is in fact a like-minded community of eaters who will support and seek out unusual dining experiences like tripe risotto and trotter tacos.


4. Most Unexpected Discovery: NAOE. I stumbled across NAOE while browsing OpenTable and was intrigued by the brief description of an entirely chef's choice menu of "natural Japanese cuisine." After my first visit, I walked out not quite sure if what I had experienced was a dream. Repeat visits confirmed it was not all in my head. Seventeen seats, one chef, no menu. An omakase bento box with 4-5 items, followed by a procession of the chef's choice of nigiri until you cry uncle. Everything is either shipped overnight from Japan, bought that morning off the docks at nearby Haulover Marina, or unique items procured fresh from all around the country (like the best uni I've ever tasted, from off the Oregon coast). There is, quite simply, nothing else like it in Miami.

Danny Meyer Shaking His Miami Money-Maker

Shake ShackJust got word that Shake Shack, mega-NY restaurateur Danny Meyer's casual burgers 'n' shakes emporium, is going to be opening up its first location outside of New York in none other than Miami Beach, Florida.

Location is going to be in the new 1111 Lincoln Road building going up at the corner of Alton Road, with indoor and outdoor seating. Opening goal? "spring/summer 2010". (Good luck. We know how those things tend to go here in South Florida).

Rotten Apple?

A few months ago, I gave Apple Restaurant & Kore Lounge, the South Beach project of Los Angeles-based Chef Bryan Ogden (yes, son of Bradley) some grief for having delayed its opening "on account of weather." Maybe "weather" is some LA-lingo euphemism for "ownership dispute," because the next week, New Times reported that one of the investors had sued South Beach Restaurant Authority, the operator of Apple, and the other partners, claiming they took nearly $1 million from him under false pretenses.

As recently as this past Monday, the lawyers had reported to the court that they had met several times in an effort to amicably resolve the dispute, and were close to completing a settlement to resolve the entire matter. So close, yet so far away? On Friday, South Beach Restaurant Authority filed for Chapter 11 bankruptcy.


All perhaps reinforcing the adage that the way to make a small fortune in the restaurant business is to start with a large one.
